Reshteh Polo with Chicken is one of my favorite Persian dishes. Who doesn’t love carbs with more carbs?! It’s very easy to make and can be made with ingredients from your pantry and freezer. Start by cooking your chicken first because I add some chicken broth and saffron to my rice and noodles to add extra flavor and color. You can easily make it vegetarian by not adding the chicken. Substitute water for the chicken broth. The reshteh (noodles) I use are Sadaf brand, you can find them online or at most middle eastern stores.
