Momos (Dumpling) Sauce from small tomatoes taste better. Onion (प्याज), small cut. Vegetable Oil (तेल): 1 tablespoon Dried Red Chili (रातो खोर्सानी), soaked for 3 hours. Garlic (लसुन), minced. Ginger (अदुवा), minced. Green Cilantro (हरियो धनियाँ) : 3 tablespoons. Will use for garnishing. Peanut (बदामको धूलो), roasted powder. Fenugreek Seeds (मेथी) Salt (नून): 1/2 teaspoon or per your taste. I'm using Himalayan Salt. It taste better than other. Garam Masala Powder (गरम मसलाको धुलो): 1/2 teaspoon Sichuan Pepper (टिम्मुर) Turmeric Powder (बेसार) Kashmiri Red Chilli Powder (कश्मीरी रातो खोर्सानीको धुलो): 1 teaspoon Reason for choosing this one is, it adds great color but not that hot. Water (पानी): 1 cup Let's add few drops of oil and roast tomatoes. Will roast for about 1 minute, stir. Add about 1/2 cup of water, close the lid and let it cook for 3 minutes. After 3 minutes, pour out in a bowl. Looks great. Add remaining oil. Hot and ready. Fenugreek. Fry till it's roasted dark. Turmeric. Garlic. Ginger. Fry till it's red-roasted. Salt. Looks red-roasted, Onions next and stir. Stir-fry Onions. Onions look red-fried, now Red Chilies. Add lesser amount of Chilies if you like it less hot. Roasted Peanut Powder. Will fry for little longer. Garam Masala. Kashmiri Red Chilli Powder and fried Tomatoes from earlier. Add little bit of water. Looks delicious. Add Sichuan Pepper and turn the stove-off. Next, use a blender. Run the blender for about 1 minute. Let's check it out. It looks super yummy. Let's add Cilantro on top. See, it looks beautiful! Let me taste a bit. Ummm, yummy... it's very delicious. Salt, Chili, etc. spices taste just right. It taste great when served hot. About to try this super great Momo Dumpling Sauce with Chicken Momos.
