Nothing beats the smell of these freshly baked easy gingerbread cookies! These festive cookies are decorated with a simple vegan white icing.
They are super easy to make and totally delicious! Soft and chewy on the inside and perfectly spiced.
A great way to get the family and kids involved for a Christmas activity.
The spices used and molasses give an amazing flavor and the aroma while baking is amazing and the dough is easy to work with and behave really good to re-rolling and shaping.
Ingredients:
2 1/2 cups baking flour or flour-all purpose
1 tsp ground cinnamon
2 tsp ground ginger
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1/3 cup dark brown sugar
1/2 cup unsalted butter, room temperature
1/3 cup unsulfured molasses
1 egg, room temperature
Tips:
- Make sure your butter is softened to room temperature when starting. This will help ensure a great texture for your cookies.
- Add just enough flour to bring the dough together. Too much flour will make your cookies crumbly and dry.
- Dough must be chilled, you want your cookie dough firm so the cookies hold their shape and you want your cookie dough manageable so you can work with it.
- Don’t roll your dough too thin as the cookies may burn.

Once you bake and cool your cookies, the best way to store them is in an airtight container. Gingerbread cookies can last up to 7 days at room temperature on the counter.
Vegan Eggless Royal Icing with Aquafaba
This vegan royal icing uses water from a can of chickpeas in place of egg whites, like magic! It has the most delicious taste and texture and makes decorating gingerbread cookies fun and simple.
Ingredients:
100ml chickpea water
1/2 cup sifted powdered sugar
1 tsp lemon juice
1/2 tsp vanilla
Tips:
- Aquafaba is the liquid you find in cans of chickpeas. The liquid of home-cooked chickpeas does not do the trick. It has to be the liquid from a can.
- When you’re not working directly with the royal icing (for example, you are decorating cookies but you still have some icing left in the bowl that you intend to use next), place a damp paper towel directly on the surface of the royal icing. This prevents it from hardening.
- If your icing has started to harden, add a drop or two of water to bring it back to your desired consistency so it doesn’t clog your piping tips. However, avoid making the icing too thin as it’ll lead to air bubbles which is not good for cookie decorating.
- Transfer to a piping bag and use immediately or store in an airtight container in the fridge for up to 3 days. let it come to room temperature, then mix it up with a whisk a few times as it may have separated. Whisking in a few drops of water is helpful if it thickened.
