【BEST TONKATSU Recipe】 Japanese Pork Cutlet /Deep Fried Pork/Tips of How to deep-fry Crispy & Juicy

This is one of the most popular “Western style’ Japanese cuisine not only in Japan but also out side of Japan. The key to great Tonkatsu is to double- fry the cutlet! It is also applicable to Katsu curry, Katsu sandwich and Katsu DON once you have acquired how to make TONKATSU! …………………………………………………………………………….. Ingredients （Serve for 2） Boneless Pork loin chops 1lb (Slice in half) Cabbage(small) ½ Tomato ½ Lemon ¼ S & P Egg 1 Flour 5tbs PANKO(crumbed bread) 5 tbs TONKATSU sauce(sweet and savory spiced fruit sauce) **Optional Japanese hot yellow mustard **optional Direction 1. Cut a chunk of boneless pork Loin chop in a half.(Slice) and cut connective tissue with the tip of a knife. 2. Sprinkle salt & pepper, then put flour, egg and PANKO evenly on the surface of the meat. 3. Pour the vegetable oil in a pot (1 inch height of it) and double- fry. At first, deep-fry the cutlet with lower heat which is around 170 C/340 F for 2-3 min. 4. Take the cutlet out and let it sit for a few minutes to cook with remaining heat. 5. Next, deep-fry with higher heat which is 180 C/ 355F for 1 minuite then rest for a while as the same reason of the first rest. 6. Dish the cutlet up with shredded cabbage, tomatos and a lemon wedge. 7. Serve with TONKATSU sauce and Japanese hot yellow mustard.
