They grew their own corn, beans, coffee and sugar cane, which they made molasses id="hidden2" class="buttons"> from. They raised their own cattle ( who were grass fed), chickens and turkey. Everything was from the earth to the table nothing processed. Tortillas were a staple. They were eaten with every meal, yet my grandparents lived until they were 90 years old with no diabetes or obesity. What they didn't eat, was processed foods. No soda, candy or fast foods. I truly think the introduction of these foods contributed to the development of diabetes, heart disease and obesity. ....وسعت 1435

Meat or chicken was only once id="hidden6" class="buttons"> in a while because it was expensive. He never saw a Coca-Cola or any other US products until he was a teen. He and everyone he knew were skinny kids. Then he left Mexico and when he returned years later, with me, he discovered that almost every other Mexican you see is FAT. I tried telling this story, which is completely true, to the KETO community on Reddit and I was banned temporarily from the group. The Keto fundamentalists do NOT like to hear that you can stay skinny by eating mostly corn and beans, that is mostly carbs. ....وسعت 40

It's an agriculture book id="hidden7" class="buttons"> from the 1930's, the author describes the empty calories from crops grown in worn out eroded dead soils which was causing malnutrition among the nation's poor especially in effected areas [food travelled less then]. Mental retardation and "simpleness" was common as a result. So much of our food problems can be traced back to severely damaged microbiomes in our soils under conventional agriculture and overreliance on just a few crops. They grew their food, raised chickens and pigs etc. Truly lived off id="hidden8" class="buttons"> the land. Washing clothes by hand, my grandmother had her own smokehouse and hardly ever stood still. My grandfather made his own moonshine and smoked cigars, he lived to 81, she lived to 102. Their children however, moved to the mainland and never made it to that age. My Mom died at 64, she had heart disease, hypertension and died from complications after surgery to repair damage done by diverticulitis. My family is part Indigenous- Mexican and for the most part with serious health conditions, one being overweight. I started taking care of my health and lost 45 lbs (extra weight I had on), strength training/hiit, intermittent fasting, clean eating, and stopped drinking soda.     Just want to add what is obvious to my naked eye and have very little to do id="hidden15" class="buttons"> with Corn actually:
    1) Soda consumption skyrocketed 30 years ago and keeps growing specially among youngsters
    2) When they grow and get worried about their health they fall into the "low-fat" nonsense
    so turn down traditional Mexican food which is rich in saturated-fat in favor of boxed cereals and skim milk,
    also switch Sodas for "fruit" Juices (Industrial or Organic, both spikes Insulin)
    3) When all this fails (sure it will) then go to Medical Drs. and get their prescriptions
    .. the rest is history

At the end of the year I only did superficial preparation for the exams. In my humble opinion Dr Ekberg's lectures are like that. You actually understand what he is talking about! When you soak the id="hidden19" class="buttons"> corn in calcium hydroxide it significantly increases the bio availability of niacin in the corn.     @leolopez7762منذ 3 سنوات Thank you Sten! I felt compelled to write additional intelligence info. about mexican diet. Myself being from México I may add these factors to your kick ass video:
    1. Massive consumption of processed wheat products and "pan de dulce". Introduced by the Spanish.
    2. Massive consumption of any sorts of sweet fruits all year around (not available in the past, isn't it?)
    3. Daily intake of home made flavored water made of sweet fruits and with a monstrous additional refined sugar cane amount on it to "swetten it up" haha
    4. Drastic reduction (+80% I would say) of green leaf vegetables within two generation time horizon.
    5. Cow milk consumption and all other derived processed milk products
    5. Alcohol drinks
    6. Substitution of good old pork lard, butter and beef lard by refined "seed oils".
    Now immagine adding a top all corn GMO's, sodas and lack of exercise you mentioned!
    Just by eliminating wheat, sugar, milk, refined oiIs, alcohols and going keto I've lost 10kg of basically inflammation in 2 year period. (I never used to drink sodas)

I now live in Thailand and sad to say but there are many obese people here now including many young women. When my last financial crisis left me homeless, I learned there is a growing community living in cars and vans so I bought one to mitigate financial pressure. I am glad I did! There wasnt as much processed sweets like candies, cookies and cake. id="hidden35" class="buttons"> Most things were handmade and people didnt eat them that often. This was in the mid and late 80s and we would go to my grandpas farm north of Matehuala, SLP. There were not that many cars and people would literally walk everywhere. My grandfather is 95 and still walks a lot but as you said he ate mostly organic food throughout his life. It wasnt until maybe the late 90s that processed foods started really creeping in. In the 2000s and on Mexico has started to become very westernized with a lot of US fast food restaurants opening up down there. ....وسعت 2

I always look for grass fed meat and dairy but knowing that they can feed a cow grass for one week only then call it “grass fed”. Makes me loose hope a bit. Thank you Dr Ekberk for your clear explanations. I actually don’t bother with any other health, food , nutrition videos now. Germ used for corn oil sold mainly to Frito lay for cooking potato chips etc, id="hidden37" class="buttons"> 2. Fiber which is mixed in with the cracked corn and corn syrup in some cases and (tailings etc) used primarily for animal feed. 3. Gluten (high protein) which is primarily used for commercial fish food Salmon farms etc, and dog food, 4. Starch Is where the money’s at, HFCS produced for Pepsi/Coke and other soft drinks, and a host of other sweet foods and candies, dum lollipops, m&m’s, pancake syrup etc, also ethanol production.
    Thanks doctor for an excellent informative video, I’m thankful looking back how I was raised by my parents in the 60’s and the 70’s, we didn’t have all the junk food in the house you see today, and never ate fast food (until I was older in high school) when we did have ice cream or something sweet it was a special occasion, grew up a little hungry at times although mom always cooked good meals, we were active with sports and outdoor activity and us kids were very slender and healthy, and happy (good times)

We ate beef, pork, chicken, drank raw milk, vegetables and fruits from the garden were canned or frozen. id="hidden45" class="buttons"> I split a 12 oz root beer with my brother once a week on Saturday night. Left the farm for college at 6'-0, 180 lbs and built like a rock. Struggled with new junk food for a few years. Got back to 180 and held until about 54 YO. Became a victim of social drinking and ballooned. Now I'm following Dr. Ekberg and have 180 as a target. Making steady progress with keto 20:4 IF. ....وسعت 2
