Ingredients:
6 Whole eggs at room temperature
30 ml of Whisky or Brandy
200 gr. Granulated Sugar
100 ml Vegetable Oil
250 gr. Plain Flour (sifted)
3 teaspoons Baking Powder
Preheat Oven at 180°C, Bake for 15 minutes
For Frosting:
200 gr. Icing Sugar
50 Cocoa Powder
90 ml of milk
Sprinkle Coconut on top of Lamingtons

How are Lamingtons made?
A lamington is an Australian cake made from squares of butter cake or sponge cake coated in an outer layer of chocolate sauce and rolled in desiccated coconut. The thin mixture is absorbed into the outside of the sponge cake and left to set, giving the cake a distinctive texture.
How do you keep Lamingtons fresh?
Simply place in an airtight container and store in the freezer for up to 3 months. Thaw at room temperature, then fill. Once filled, keep the lamingtons in the fridge. Remove from the fridge 20-30 minutes before serving for a softer, more flavor some cake.
Why is the Lamington an iconic Australian cake?
This Australian culinary icon, which consists of sponge cake dipped in chocolate and liberally sprinkled with fine desiccated coconut, is believed to have been created through an accident at work by a maid-servant to Lord Lamington, the thoroughly-British eighth Governor of Queensland.
Australian Lamingtons, a chocolate and coconut coated sponge cake sometimes filled with jam. Named after Lord Lamington, history has it that the sponge cake was accidentally dropped in melted chocolate in the government house kitchen, it was then suggested to coat them in coconut to avoid messy fingers.
