Aloo Methi or potato fenugreek is one of my most favourite all time comfort food. It’s a simple and common Punjabi recipe and I have a special affinity for this dish, thanks to my Delhi roots and great Punjabi friends. This is a tribute to all my Punjabi friend’s mothers who always lovingly fed me this sumptuous dish….
Ingredients :
500 gms methi (washed and then chopped)
2 medium size Onion finely sliced
1 ½ tbsp chopped garlic or Garlic paste
2 medium sized potatoes, cut in 1 inch cubes
2 tbsp Jeera (Cumin) whole
3 Whole dry Red Chili
1 tsp Red Chili powder
1 tsp Haldi powder (Turmeric)
2 tsp Kashmiri Red Chili powder
1 ½ tsp Coriander Powder
1 tsp Sugar
Salt according to taste
3 tbsp Mustard Oil
