SIMPLE VANILLA CAKE
Ingredients:
2-1/2 cups all-purpose flour (490g)
2 cups sugar (470g)
1 cup milk (250ml)
1 cup vegetable oil (190ml)
4 eggs
2-1/4 teaspoons baking powder
1 teaspoon vanilla
Method:
Preheat the oven to 180°C (or 350°F). Line your pan with baking paper and grease with butter or cooking spray.
In an electric mixer, beat sugar and eggs together for about 1 minute, or until slightly thickened. Add flour, milk, oil, baking powder, and vanilla and beat for another minute until the batter is smooth and creamy, taking care not to overmix. Pour batter into the prepared baking pan.
Bake in the preheated oven for 30-40 minutes or until golden and a toothpick, skewer or cake tester comes out clean.
Remove from the oven and leave to stand for 15-20 minutes. Loosen the sides of the cake from the pan with a thin knife, then turn out onto a rack and peel off the paper. Let cool completely before covering with buttercream.
