In this video, I show you two new, creative meal prep recipes to recuperate from Thanksgiving! See the description below for the full recipe ingredient lists and steps.

Broccoli Cheddar Bites-
Ingredients
~4 cups broccoli florets (2 cups chopped)
½ white onion
2 eggs
¼ cup bread crumbs
1/8 cup mayonnaise
½ cup shredded sharp cheddar cheese
1 – 2 tsp. lemon juice
Salt & Pepper
Instructions
1. Preheat oven to 375 F
2. Steam broccoli and chop
3. Dice onion very small
4. Add prepared vegetables to large mixing bowl along with whisked eggs, bread crumbs, mayo, cheddar cheese, lemon juice, salt, and pepper; mix to combine
5. Prepare muffin tin with cooking spray and divide mixture into 12 tins
6. Bake for 25 minutes
7. Pair alongside with your favorite protein meal prep or the chicken poppers below!

Chicken Bacon Ranch Poppers-
Ingredients
1 lb. ground chicken
6 slices bacon
1 egg
1 tbsp. ranch seasoning
Salt and pepper
Ranch, for dipping (optional)
Instructions
1. Preheat oven to 375 F
2. Cook bacon to crispy and chop into small bits
3. In a large mixing bowl, add in all ingredient except ranch dressing
4. Mix ingredients together and form tablespoon size balls (you should have about 16)
5. Add poppers onto a prepared baking sheet
6. Bake for 35 minutes
7. Pair with ranch dipping sauce (optional) and your favorite veggie!

Egg Roll in a Bowl-
Ingredients
1 cup rice (optional)
1 tbsp. sesame oil
1 lb. ground sausage
~1/2 tsp. garlic powder
Salt & Pepper
Ground ginger (optional)
1 package Coleslaw mix
1 tbsp. hoisin sauce
1 - 2 tsp soy sauce or coconut aminos
~4 tbsp. yum yum sauce (optional)
Instructions
1. Prepare rice in cooker or on stove
2. In a pan at medium heat, add in sesame oil and sausage to begin browning
3. Add in spice and continuing cooking until fully browned
4. Add in coleslaw mix, hoisin sauce, and coconut aminos; cook until coleslaw mix is soft
5. Serve sausage mixture over prepared rice
6. Top with yum yum sauce when ready to serve (optional)
