Today i made these yummy light clementine cupcakes with Terry's chocolate segments on top. ingredients:
3 peeled, blitzed and strained clementines.
1 zest of a lemon
1 egg
100 g sugar
50 g soft butter
200 g self raising flour
100 ml milk
1 tsp baking powder.
baked these in the oven for 15 minutes under 180 c.
I took them out of the baking tray straight away onto a cooling rack. I placed the chocolate segments on top of the warm cakes to allow it to melt slightly turning into a soft ganache. then I sprinkled them with icing sugar. hope you try this and enjoy it as much as we did. thank you
