These easy no-bake carrot cake truffles are the perfect sweet treat to enjoy with your little ones🐰
They also make for a healthy snack that is packed with protein and fiber. These are GF, vegan and so yummy 🥰
Ingredients:
1 /2 cup raw pecans
1 cup raw walnuts
1 cup medjool dates,pitted (11 medjool dates)
(around 10 dates)
1 cup finely shredded carrots (I used 2 medium carrots)
1/2 cup shredded coconut
1 Tsp vanilla extract
1.5 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1/2 tsp ground ginger
Instructions:
1. Add all the ingredients to a food processor,pulse/ blend the ingredients until they form a sticky dough. If the dough is not sticky enough just add 1 or 2 Tbsp of water and blend again.
2. With a small ice cream scooper or tablespoon scoop and roll the dough into balls. Add shredded coconut to a plate and roll each ball into the coconut shreds.
3. Place in the fridge for a couple of hours to firm up and enjoy!🐰
