PORK & TOFU SISIG is a Kapampangan dish here in the Philippines. Sisig
means "to snack on something sour". This is a version of sisig which consists of pork belly, tofu mixed with chicken liver, onions, chilis and seasoned with kalamansi. It is served as a dish or pulutan with a glass of beer.
Ingredients:
500g pork belly (boiled & fried)
500g tofu (fried)
2pcs chicken liver (fried)
1 medium-sized yellow onion
1 medium-sized red onion
3 pcs green chili
3pcs red chili
1 tsp coarse salt
1 tsp ground pepper
1 tsp soy sauce
5pcs calamansi
2 tbsp mayonnaise
1 tbsp butter (for the sizzling plate)
