Who doesn’t love meatballs? Especially the super popular ones all over the world from IKEA. Try out this version of them, and I’m sure you’ll like them. 12oz ground beef 12oz ground pork 2 slices of white sandwich bread 1 small grated yellow onion 1/2tbs kosher salt 1tsp black pepper 1/2tsp allspice 1/2tsp nutmeg 1/2tsp garlic powder 1/4c all purpose flour 1/4c unsalted butter 2c beef broth 1/2c heavy cream Finely sliced green onion tops Additional salt and pepper to taste Cube the bread, add to a bowl with the grated onion, and mix well. Add all remaining ingredients, except for the butter and flour, and mix very well. Scoop out the meatballs, roll them, and place on a pan to put into the refrigerator. After about an hour, remove from the refrigerator. Brown the meatballs in a hot skillet with a little oil. Cook long enough to get them brown on the outside, then remove from the skillet, and set aside. Discard any grease from the pan. Add the butter, and melt. Now add the flour to the butter, and keep it moving. Do not let the roux burn. Keep stirring, until the roux reaches a peanut butter color. Slowly add in a little of the beef broth at a time, and stir. When all of the beef broth has been added, let it simmer and reduce a little till thickened enough to coat a spoon. Add the meatballs back to the gravy, cook a little longer, rotating them to stay covered in gravy, until you reach an internal temperature of about 145*. Now add the heavy cream, and mix well. Cook till the meatballs have reached an internal temperature of 155*. Taste for adjustments on salt and pepper to your liking. Serve as is, or over noodles or potatoes. It’s totally up to you. Garnish with the green onions.
