Rachel Khoo shares a quick and easy version of lemon cheesecake. Super simple, yet bursting with citrus notes and delicious creamy flavour.
Lemon cheesecake bites:
Preparation time: 15 minutes
Ingredients:
20 thin biscuits*
250g cream cheese
1 heaped tbsp ricotta
100g lemon curd
Tools:
2 piping bags and one fluted nozzle
Method:
Beat the cream cheese and ricotta together.
Place in a piping with nozzle.
Pour the lemon curd into a separate piping bag.
Pipe cream cheese mix onto the biscuit followed by the lemon curd
Eat immediately.
*Thin biscuits tend to go soggy more quickly, hence it’s best to eat immediately.
