FOR COOKING mutton chops 500 gms salt as required dhaniya powder (coriander powder ) 1/2 tea spoon red chili powder - 1/2 tea spoon cumin powder - 1/2 tea spoon white pepper powder - 1 tea spoon garam masala powder - 1/2 tea spoon onion powder - 1 tea spoon red chili flakes - 1/2 tea spoon vinegar - 1/2 tea spoon soya sauce - 1/2 tea spoon ginger garlic - 1 tea spoon water - as required cooking oil - 1 table spoon FOR FRYING whisked eggs - 2 nos bread crumbs - some and oil to fry. FOR FINAL SEASONING some red chili flakes some oregano some freshly chopped coriander. PROCESS AND METHOD. In a kadai, combine 500 grams of mutton chops with salt to taste, 1/2 teaspoon of dhaniya powder, 1/2 teaspoon of red chili powder, 1/2 teaspoon of cumin powder, 1 teaspoon of white pepper powder, 1/2 teaspoon of garam masala powder, 1 teaspoon of onion powder, 1/2 teaspoon of red chili flakes, 1/2 teaspoon of vinegar, and 1/2 teaspoon of soya sauce. Add 1 teaspoon of ginger garlic paste and mix the ingredients thoroughly. Place the kadai on the flame and add water as needed, then heat the mixture. As it simmers, cover and cook until mutton cooks 70%. While the mutton cooks, take a mixing bowl and break 2 eggs into it. Gently beat these eggs and set them aside for later use in the recipe. Uncover the kadai and continue to cook the mutton chops, allowing them to simmer until all the liquid has dried up, and the chops are beautifully coated with the aromatic spices and seasonings.
