Muhammara is one more popular appetizer in Mediterranean cuisine. You will find muhammara (roasted red bell pepper dip) served as a mezze dish with other dips like babaganoush, foul and hummus, of course. The recipe will serve 6 portions Ingredients 3 red bell peppers (600 g) 3 tbsp (50 ml) extra virgin olive oil, divided 1/2 cup (60 g) shelled toasted walnuts 2 garlic cloves, roughly chopped 2 tbsp (40 g) bread crumbs 1 tbsp pomegranate molasses 2 tbsp (30 ml) fresh lemon juice 1/4 teaspoon paprika 1/4 teaspoon cumin 1/2 tsp salt INSTRUCTIONS Roast bell peppers on the direct flame or gas for a 15-20 till soft. Remove from the gas and place the peppers in a bowl. Cover with plastic wrap for a 10-15 mins. This making them easy to peel. When cool enough to handle, simply peel the peppers, remove the seeds. In a blander or food processor combine the roasted red pepper with olive oil, walnuts, bread crumbs, garlic and all the remaining ingredients. Blend into paste. Taste it and adjust the salt if needed, you can add an Aleppo pepper or cayenne pepper to your preference. This step is optional. Transfer the muhammara spread (dip) to a serving bowl. When ready to serve, top the dip with a drizzle of extra virgin olive oil, and garnish with more walnuts and fresh parsley, if you like. Serve muhammara with pita bread or pita chips. Enjoy!
