Ingredients:
Milk Cheese
4 cups milk
3 tbsp lime juice
Milk Base
4 cups milk
½ cup sugar
¼ tsp cardamom powder
1 tbsp crushed pistachios
1 tbsp sliced almonds
Instructions:
1. Bring milk to a boil then turn off the heat and add lime juice
2. Stir to separate milk cheese then strain using a cheese cloth
3. Pour water over to rinse out any remaining acidity and set aside
4. Pour milk and reduce to half
5. Transfer the milk cheese to the reduced milk pot
6. Add sugar, cardamom powder and stir until further reduced
7. Brush ghee on a baking glassware before transferring the sandesh
8. Press down on the Sandesh and garnish with nuts then press down once more
9. Chill for minimum 2 hours before serving
10. Ready to Enjoy!
