Place yeast in a large bowl. Mix milk and water together. Heat until mixture is warm to the touch. If you use a food thermometer, 110 to 115 degrees is ideal. 2. Pour liquid mixture into the bowl. Stir with yeast. Leave sit for 5 minutes. 3. Add butter, egg, sugar, and salt. Blend in. Add 1 3/4 cups flour to the mixture. Stir together with a spoon. Slowly add remaining 1 3/4 cups flour. Begin to knead with hands when dough takes on a more solid form. 4. Pour 1/2 cup to 1 cup flour on a clean surface and knead into dough. Only use enough flour to bring your dough to a Play-Doh consistency and moisture level: not sticky but not dry. Preheat oven to 200 degrees. Turn oven off when this temperature is reached. 5. Pour dill weed and cheese onto cleaned counter. Work ingredients into dough by folding them in, kneading until integrated. The cheese is added at this point because shredded cheese tends to get soft, gooey, and attract dough clumps when added earlier. 6. Cut dough with a dough blade into 12 pieces. Roll into each piece into a bun shape. Place buns into a covered oven-proof bowl or dish and place in oven for 20 minutes. 7. Remove buns and preheat oven to 350 degrees. Roll buns between hands again briefly. Place them on a greased or sprayed cookie sheet. Top each bun with butter and dill weed. Bake for 20 minutes. 8. Brush buns with milk when fresh out of the oven. This is an important step that helps prevent bun tops from feeling dry. Buns will at first be firm when coming out of the oven from the reaction to the heating elements. Within 30 minutes the tops of buns will begin to be soft and get softer as they settle to room temperature. 9. Enjoy alone or with a meal!
