Baby Back Ribs on the Karubecue C-60 Pit

I was in Walmart, of all places, last week and found a rack of baby back ribs that weighed 5 1/5 pounds. I don't typically buy beef and pork at Walmart but I had to grab this one. I just had to find out how good THAT particular right might be. I fired up the KBQ Karubecue C-60 to run at 250°F using 100% oak splits. I also configured the Karubecue to draw smoke from the top chamber of the firebox for this cook to see how smoky I might be able to get these ribs. I ended up having to allow some of the heat to be pulled from below the firebox because of ambient temperatures in the 30s. These ribs turned out amazing. First of all, I never buy the cheaper ribs that are injected with 'solution.' THESE ribs from Walmart were Smithfield brand, which IS the brand I normally buy. Here in North Carolina, Smithfield is easy to get. The Karubecue did an amazing job of cooking these. My cook time on this rack of ribs was 2:15 unwrapped, 1:30 wrapped, and about 30 more minutes basted with sauce, all at 250°F. 1:30 may have been a touch too long in the foil for my taste but they still came out perfect.
