This Raspberry Curd is a unique and amazing. The curd is creamy, fruity, quick, easy to make and tastes good on anything. Fruit curd is a dessert spread and topping usually made with citrus fruit, such as lemon, lime, orange, or tangerine. Other flavour variations include passion fruit, mango, and berries such as raspberries, cranberries or blackberries. The basic ingredients are beaten egg yolks, sugar, fruit juice, and zest, which are gently cooked together until thick and then allowed to cool. In late 19th-century England, homemade lemon curd was traditionally served with bread or scones at afternoon tea as an alternative to jam, and as a filling for cakes, small pastries, and tarts. INGREDIENTS For 1 cups 200g raspberries 100g Sugar 2 Tbsp Lemon Juice 1 Tbsp lemon zest 2 Egg yolk 2 Tbsp Water 1 Tbsp Sugar 1 tsp Corn Flour 50g butter INSTRUCTIONS Step 1 Cook raspberries, Lemon Juice, lemon zest and Sugar over low heat, until they start to break down, gently crushing the berries with a wooden spoon. About 10-15 mins Skim away foam Step 2 Strain the berries through a fine-mesh strainer to remove the seeds. Step 3 Mix Egg yolk, Water, Sugar and Corn Flour together. Step 4 Slowly pour the hot raspberries into the egg yolk while whisking briskly. Be sure NOT to add it too quickly, or it will cook the egg yolks and create chunks. Step 5 Pour it all back into the saucepan and cook over low heat, stirring constantly, until the mixture has thickened enough, About 4-5 mins. (do not boil) Skim away foam Step 6 Immediately remove from the heat Add butter whisking constantly, until butter has melted Step 7 Press a piece of plastic wrap directly onto surface of the curd and refrigerate for at least 3 hours to chill and thicken it. Tip and Tricks: *You can use fresh or frozen berries in this recipe. But, Fresh raspberries is my prefer😁. *Do not attempt to rush this recipe by cooking over a higher temperature and do not leave the saucepan unattended. *Curd can be refrigerated for up to 7 days🥶 in an airtight container. *The gelatine is optional. If you’re using the curd for a spread or sauce you don’t need the gelatine. *Because raspberries have some pectin naturally, the recipe doesn’t require as much egg yolk and butter as a traditional lemon curd. *Cook the mixture in a non reactive pan(stainless steel) do not use Iron, aluminum,cast iron, causing them to turn metallic in flavor. *There are so many fun ways to use this raspberry curd in a dessert: Drizzled on Fruit with Whipped Cream Filling in French Macaroons Between Cake Layers Inside Crepes In a Tart Shell Layered in Brownie Parfaits As a Cupcake Filling Marbled with Cheesecake On Pavlova ©Amir Sarikar.
