Original and tested kaleji fry in desi ghee
Ingredients:
Kaleji – 1 Kg
Ginger Garlic paste – 3 Tbsp
Onions paste – 2 medium size
Fennel (Saunf) – 1/2 tsp
Black seeds (kalonji) – 1/2 Tsp
Methi dana – 1/2 Tsp
Coriander seeds – 2 Tbsp crushed
Cumin powder – 1 Tsp
Red chili powder – 1 Tsp
Red chili flakes – 1 Tsp
Turmeric Powder – 1/4 Tsp
Salt – 1 Tbsp
Yogurt – 1 Cup
Milk Cream – 3 Tbsp
Green Chilies – 4 to 5 Crushed
Ginger – sliced for garnish
Garam masala – 1 Tsp
Directions:
- Take one Kg piece of kalaji. Take a whole piece, Don’t cut into pieces
- Take a deep pan and add this one whole piece of kalaji in it. Now add water and leave it for 5 minutes. Repeat this process 5 to 6 times. This will help to remove blood clogged in it.
- Now cut this Kaleji into small pieces. Don’t wash it when it is cut into pieces.
- Add 1/2 cup of ghee in a pan and let it melt, now add ginger garlic paste and fry it.
- Once water evaporates now add kaleji and fry it till it turns tender.
- Taken another pan and add 3 Tbsp of desi ghee and add saunf, kalonji and methi dana fry it for 2 to 3min.
- add this onion paste and tomatoes, fry it. also add other spices like, red chili powder, coriander seeds crushed, cumin powder, salt and turmeric powder.
- Add milk cream in yogurt and blend it lightly. Now add this into the fried onion paste.
- Once the spices are fried now add this kaleji, green chilies and adjust the gravy.
- Add garam masala and Garnish it with sliced ginger.
