How yummy does this look! Fatteh Hummus is all about the flavours: crunchy pita chips, creamy chickpeas,, drowned in yogurt, garnished with toasted pine nuts, and pomegranates 💥
Ingredients
* 6 pita bread, baked * 2 cups chickpeas (canned) drained and rinsed
* 4 cups (750 g) plain yogurt
* Salt * 2 cloves garlic, minced
* 3 tablespoons lemon juice
* 1/4 Cup tahini paste
* ⅓ cup pine nuts, toasted
* Chopped parsley * 1 Cup pomegranates * 1/4 Cup water
Directions
1. Preheat the oven to 350F.
2. Put the pita bread on a baking sheet and bake until lightly browned and crispy. Remove from the oven and set aside.
3. Wash the canned chickpeas and place in a small pot with some water over medium-low heat for 5-7 mins simmer until chickpeas are heated through. Remove from heat and set aside.
4. Meanwhile, put the yogurt, garlic, lemon juice, tahini, and a pinch of salt in a large bowl and whisk until thoroughly combined. Whisk in 1/4 cup water if the mixture is too thick, until a desired consistency is reached.
5. Assemble the fatteh in a large serving plate or in individual bowls
6. Break up the toasted pita a bit and arrange them in an even layer. Top with the warm chickpeas, then the yogurt sauce. Sprinkle with pomegranates, parsley and pine nuts. Serve immediately
