After osme time it changes colour and you just take small portion and bind, it forms a shape. Then add slat, cumin seeds, kalonji to this. Add water little by little and knead to a stiff dough. Knead the dough halfway n rest dough for 10 min. Again knead it…it will be more smooth. Rest the dough for some time. Divide the dough into equal portions and knead it again. Make dumplings…tap with oil so that it will not stick to floor. Now roll the dough into thin sheets…roll from all sides to get even thickness. Prick with fork so that papdi will not puff up while frying. Take murukku maker and make papdi by pressing it on the sheet. Heat oil for deep frying and in low flame only drop each papdi. When bubbles reduced and papdi will start floating, flip each papdi. Fry till it turns crisp and golden colour. Enjoy the crisp n crunchy papdi… Notes The dough should be medium tight dough like samosa. The oil should be well incorporated with the flour so that papdi is more crunchy n light. Roll the sheet thin n prick with fork so that papdis are not puffed up while frying. Fry the papdi in low flame , if flame is high then papdi will be soft.
