Chayote, also known as Squash in West Bengal is largely eaten during the summer and rainy season as it contains much water and is a good source of vitamin C. The young branches are also considered for making items as saag or can be added to preparing the Shukto. There are two varieties available; dark green and light green. The dark green variety is much more tender than the lighter one, which develops a fibrous texture around its seed if harvested or consumed lately.

Ingredients:
2 pcs. chopped squash
1 large potato chopped
1 chopped large onion
3 slit green chillies
1 tsp garlic paste
1 tsp ginger paste
1 tsp turmeric powder
1 tsp cumin powder
1 tsp red chilli powder
1 tsp garam masala powder
1/2 tsp cumin seeds
2 dry red chilli
Salt to taste
3 tbsp Refined/Mustard Oil
