If you have an abundance of tomatoes and peppers in your garden, one of the best ways to make use of them is with a fresh garden salsa. I'll be using a bunch of traditional Mexican ingredients in my garden salsa to make a savory blended condiment that can be used for dipping or in cooking. this would make an exceptional enchilada sauce. I'll show you how to make this dish using your barbecue grill to roast the tomatoes and the peppers. Will also be making pickled peppers. I'll be using the biquinho peppers that I have discovered this year, a very fruity pepper with very little heat. Pickling these peppers in a vinegar brine with some sugar and spices ought to result in a tasty, sweet snack. Come along and let's see how we make use of our garden produce. Pickled Pepper Brine Ingredients: 1 Cup of Water 1 Cup of White Distilled Malt Vinegar (or any other) 1 TBSP Sugar 1 TBSP Sea salt 1 TBSP Coriander Seeds 1 TBSP Pepper Corns 1 Garlic Clove 1 Bay Leaf Salsa Ingredients 6-8 Tomatoes, to yield 2 cups or so roasted, skinned if you like 3-5 jalapeño peppers, roasted if you like (I used brown, TAM, and Dieghito jalapeños) 2 small onions 2 small bell peppers, or other sweet peppers if you want better flavor (roast some of them) 4 cloves garlic A couple of tomatillos (optional) 1 bunch of cilantro tops 1-2 tbsp salt to taste 1 tbsp black pepper 1 tbsp ground cumin Prepare according to video ___ Black Gumbo shares our suburban, backyard, sustainable gardening efforts.
