Time to treat yourself with another sweet dish.. Fresh Coconut Karanji or also known as Gujiya... This mouthwatering recipe is sure to blow your minds over. Try some innovation with this coconut gujiya which will become an instant hit among your loved ones.. Just be sure to finish them the same day you make these irresistible treats. Ingredients: 2 cups fresh grated Coconut 1 tsp Cardamom Powder 1/2 cup Sugar 250 gms Maida 1/4 cup Ghee Salt as per taste Water Oil for Frying Directions: 1. In a pan, heat about a tablespoon of ghee. Add the grated coconut and sugar to it and roast it for about 2-3 minutes on a medium flame. 2. Switch off the flame and add the cardamom powder to it and mix well. Keep the mixture aside to cool. 3. Meanwhile, take maida in a large mixing bowl. Add salt and the remaining ghee to it and mix it really well until you get a crumbly texture. 4. Add water gradually and knead it into a medium soft dough. Give the dough a rest of about 15-20 mins. 5. Now make small balls out of the dough. Take one and start rolling it out to the size of a puri. Use dry flour to help you with the rolling. 6. Apply water to half the circle and add about a heaped spoon of the filling mixture towards one side. Fold over into a semi-circle and seal the edges properly. Trim the edges with the help of a cutter. Work the same way with the remaining dough and filling mixture. 7. Heat enough oil in a kadhai. On a medium-low flame, slide the karanji or gujiya in the hot oil and fry till very light golden brown on both the sides. It should only take about a minute to fry on both the sides. 8. Drain excess oil and remove on an absorbent paper. Serve the fresh coconut karanji the same day you make them.
