Elote Corn Fritters
RECIPE:
INGREDIENTS:
1. 3 cups corn kernels
2. 1 cup AP flour
3. 1 cup mayonnaise
4. 1 oz vinegar
5. ½ cup chopped cilantro
6. 1 tsp cumin
7. 1 tsp coriander
8. 1 tsp paprika
9. 1 tsp cinnamon
10. 1 tsp cayenne pepper powder
11. ¼ cup cotija cheese
12. Pico and green salsa for garnish
13. ¾ cup neutral oil for cooking
INSTRUCTIONS:
1. Mix everything besides your garnish in a large mixing bowl until you have a consistent batter.
2. Generously add neutral oil to a skillet and heat until shimmering, about medium high heat.
3. Scoop out your batter with an ice cream scooper and drop about four fritters into the skillet, frying on both sides for 2-3 minutes or until golden brown.
4. Add paper towel to a plate and place cooked fritters on paper towel.
5. Garnish and serve.
