Flattened bread slices rolled around tossed chicken sausages dipped into egg batter and cooked till golden.
FRENCH SAUSAGE ROLL UPS
Ingredients
8 white bread slices
8 chicken sausages
2 tablespoons butter
2 eggs
1 teaspoon castor sugar
Salt to taste
Crushed black peppercorns to taste
Method
1. Trim off the edges of bread slices.
2. Heat 1 tablespoon butter in a non-stick pan. Add sausages, toss to mix and sear for 2-3 minutes or till golden.
3. Flatten the bread slices with a rolling pin.
4. Break eggs in a bowl. Add castor sugar, salt, crushed peppercorns and whisk well.
5. Place 1 sausage on each bread slice, brush some water on the edges and roll. Trim off the edges.
6. Heat remaining butter in a non-stick pan. Dip the rolls in egg mixture and place on hot pan and cook till all sides turn golden. Drain on absorbent paper.
7. Serve hot.
