500 g mascarpone cream cheese
200 g white baking chocolate + 40 ml heavy cream
200 ml heavy whipping cream
For the rhubarb compote:
500 g diced rhubarb
200 g granulated sugar
Juice and zest of 1 lime
For the shiny glaze:
130 g glucose syrup or corn syrup
75 ml water
150 g granulated sugar
130 g sweetened condensed milk
150 g white baking chocolate
5 g gelatin powder
+ red gel food coloring
